From Claudette at Scarborough Fair Bed and Breakfast
2 cups warm mashed sweet potatoes
1/2 cup shortening
2 teaspoons baking powder
3 cups sifted flour
3/4 cup sugar
1 teaspoon salt
1/2 cup chopped pecans (opt.)
1 tsp cinnamon (opt.)
Sift together the flour, sugar, baking powder and salt, and optional cinnamon and pecans.
Add to potato and shortening.
Mix well.
Roll on floured board ½ in thick, or shape by hand. Bake 12-15 minutes in 425 degree oven until browned.
