Sweet Potato Biscuits

From Claudette at Scarborough Fair Bed and Breakfast

2 cups warm mashed sweet potatoes
1/2 cup shortening
2 teaspoons baking powder
3 cups sifted flour
3/4 cup sugar
1 teaspoon salt
1/2 cup chopped pecans (opt.)
1 tsp cinnamon (opt.)

Sift together the flour, sugar, baking powder and salt, and optional cinnamon and pecans.

Add to potato and shortening.

Mix well.

Roll on floured board in thick, or shape by hand. Bake 12-15 minutes in 425 degree oven until browned.
