Scarborough Fair’s Quick & Sweet Breads

This quick and easy recipe is right on target for the holidays when hostess gifts and brunches abound. The batter can be baked in one 10"x13" cake pan or two 8"x11" loaf pans.

Basic Batter:
2 cups sugar
2 tsp butter flavor extract
1 1/2 cups vegetable or canola oil
3 eggs
1 1/2 cups milk
3 cups flour
1 1/2 tsp baking powder
1 1/2 tsp salt

Preheat oven to 350F.

Beat sugar, oil and extract for 3-4 minutes until light and fluffy. Add eggs one at a time and beat until just combined. Add milk and blend well. Mix all dry ingredients together in a separate bowl with a whisk to remove lumps, then add to batter and mix again until just combined, being careful to not over mix the batter.

Stir your choice of the following measured ingredients for one version of the recipe until just combined. If you making two differently flavored recipes, divide the batter in half (about 4 cups of batter each), and add half of the ingredients needed for each flavor choice. To prevent berries in the recipe from sinking to the bottom, either place on top of poured batter or toss lightly in flour before incorporating into the mixture.

Bake 35-40 minutes or until cake tester comes out clean.

Select from the following suggestions, or get creative and make your own:

Orange/Cranberry
4 1/2 tsp orange extract
1/4 cup chopped fresh cranberries
6-9 Tbsp chopped walnuts
3-6 tsp grated orange rind

Lemon Poppy seed
4 1/2 tsp Lemon Extract
3-6 tsp grated lemon rind
3 tsp Poppy seeds

Coconut/Pecan
4 1/2 tsp coconut extract
1 1/2-2 cups sweet flaked coconut
1 1/2 cup chopped pecans

Coconut/Almond/Raspberry
4 1/2 tsp Almond extract
1 cup sweet flaked coconut
1 1/2 cups chopped almonds
3/4-1 cup blueberries

Blueberry/raspberry
4 1/2 tsp vanilla
1 cup fresh or frozen berries
