Limoncello Syrup

From Scarborough Fair Bed and Breakfast

Makes approx 2 cups.

1/4 cup butter
2 tablespoons cornstarch
1/2 cup orange juice
1 cup granulated sugar
1 lemon, juiced and zested
1/2 cup Limoncello

Melt butter, add cornstarch and stir to dissolve.

Add orange juice and granulated sugar, stirring occasionally until sugar has dissolved, and syrup thickens.

Stir in lemon juice, and zest, along with Limoncello.

(Depending on brand of Limoncello you are using, you may need to sweeten the syrup. If extra sugar is needed, use clear corn syrup or confectioners a bit at a time until you are happy with the sweetness.)
