From Scarborough Fair Bed and Breakfast
Our guests love these waffles, especially when topped with tons of fresh berries from the farmers' market and our limoncello sauce (recipe available here.) They are like the best lemon poppy seed muffin you ever ate, only made into a waffle.
Ingredients:
1 1/2 cups all purpose flour
6 tablespoons raw sugar
2 1/2 tablespoons poppy seeds
1 1/2 teaspoons baking powder
1 teaspoon baking soda
1/4 teaspoon salt
3 large eggs, separated
1 1/4 cups buttermilk
1/4 cup salted butter, melted
2 tablespoons fresh lemon zest
Juice of one lemon
Preheat waffle iron according to the manufacturer's directions.
Serve immediately, preferably with our Limoncello Sauce and many assorted farm fresh berries.
Makes 5 6" waffles
