From Scarborough Fair Bed and Breakfast
(This recipe inspired by the honeydew cooler first created by Rachel Ray.)
The color is a beautiful bright green that instantly refreshes you even before you take your first sip. After that, the sweet flavors of honeydew, crisp cucumber and the bite of fresh lemons and lime balance out the experience.
One large honeydew
One large cucumber
One large bunch of fresh mint, washed (reserve 10 to 12 leaves for garnish)
Juice of two freshly squeezed lemons
Juice of one freshly squeezed lime
One quart lemonade (pick your favorite recipe or choose premade or concentrate)
Peel honeydew and cucumber and cut into small chunks.
In a food processor or blender, puree the honeydew, cucumber and mint.
Pour pureed mixture through sieve to remove excess pulp.
Add puree to lemonade and stir in juice from lemons and limes and mint leaves for garnish.
Mix well and chill.
Pour into a large pitcher and serve over ice.
Makes approximately 1 1/2 to 2 quarts.
