From Scarborough Fair Bed and Breakfast
This fresh take on salsa is so satisfying and surprising to your taste buds that guests will beg for more.
2 tablespoons fresh lime juice
2 tablespoons honey
1 finely chopped jalapeņo pepper, seeds removed
1/4 cup roughly chopped red onion
3 ripe avocados cut into 1/4 inch pieces
1 1/4 cup fresh cranberries cut in half and drained well
3 tablespoons fresh cilantro roughly chopped
Sea salt and pepper to taste
Combine lime juice, honey, and jalapeņo with red onion and mix well. Next, add avocados, cranberries, cilantro, salt and pepper. Toss gently, being careful to not mash avocados.
Serve with pita or tortilla chips.
